Chocolate Peanut Butter

3 c lightly salted peanuts, shelled
4 oz bittersweet chocolate, melted

Place the peanuts and chocolate into a food processor. Process until smooth (it takes a few minutes...it starts out pretty dry and chunky, so just keep processing!)

I stumbled across a fellow food blogger's (Runs with Spatulas) blog on dark chocolate peanut butter, and I just had to try to make my own.

This was just about the easiest thing in the world to make, and it couldn't be more delicious. The nut spread came out perfectly, fairly smooth, not too runny, and definitely tasty! The chocolate imparts a very slight chocolaty flavor without being too overpowering.

D is as excited about this peanut butter as I am, and read my mind when he said, "This would make one killer fluffernutter!". I think we might try to keep J away from this stuff. He's already a huge peanut butter fan, and he likes his chocolate too, so we don't want to encourage this one too much!

  3. Mikaela, I totally think this is good for you! Peanut butter is an excellent protein source, and the dark chocolate is full of antioxidants:)

    Foodiva, definitely try making this. As for the fluffernutter recipe, simple: 2 slices of whole wheat bread, 2 tbs chocolate peanut butter, 1 1/2 tbs marshmallow fluff. Spread peanut butter and fluff onto bread and enjoy!
