Avocado Corn Chowder with Grilled Chicken

Last night we made this awesome chilled avocado corn chowder with grilled chicken from the latest Cooking Light magazine. The soup itself was absolutely scrumptious, light and just sweet enough. The fresh vegetable additives gave a lot more flavor and texture to the soup, and the grilled chicken really finished off this meal perfectly! J actually loved the avocado soup, and couldn't get enough of it...he even asked for a straw to drink it! This is one excellent way to sneak more veggies into our little man:)

My one complaint with this recipe was that the actual soup part barely made enough for 3 people. With all the additives, it certainly fleshed out the meal, but when I make this again, I think that I will double the soup base recipe.
