Last night's dinner needed to be a quick one, but I also wanted something reasonably healthy and more exciting than the same-old-same-old. D's been working a ton, as usual these days, and I've been feeling a little stir-crazy. Having a more exciting dinner option, but still something easy to throw together was totally necessary!
I found the recipe for these corn pancakes with smoked salmon and a lemon-chive sour cream sauce in the latest edition of Cooking Light Magazine. Luckily we have a nice hearty bunch of chives growing in our vegetable garden, so it was easy to make the sauce and garnish it. I really enjoyed the very slight heat that the red pepper flakes added to the pancakes, and the lemony sauce was the perfect balance to the saltiness of the smoked salmon. J LOVES smoked salmon, so he kept on eating it, and L seemed to like her pancake. I served these pancakes with a side salad of chopped tomatoes, avocado, and cucumber. Delicious! And, the best part, this whole meal took me 25 minutes from start to finish!
