At first I was a bit skeptical, but after reading through the recipe, and seeing her excitement, I decided it was worth a try. And wow, am I glad that we went for it!<p></p><p>This dish was surprisingly simple to prepare, especially considering how decadent it felt to eat and looked when I pulled it out of the oven. I definitely didn't go through the trouble of making my own puff pastry dough (that would have taken it to the next level). But, the entire meal came together in just about 10 minutes of prep time, and with about 35 minutes in the oven, it was a cinch.</p><p>The flavors were rich, layered with a variety of textures and flavors. I skipped adding the parmesan cheese, and it still felt "cheesy" in taste. The sealing of the package was crucial to ensuring a crispy bottom pastry layer. We love a good Moo Shu, but do not have a place that we really love to order Chinese food from these days. Enter a New York Times Cooking recipe for<a href="https://cooking.nytimes.com/recipes/1020819-mandarin-pancakes"> Mandarin Pancakes</a>, and voila! Dinner is amazing.<br /><br /></p><p style="text-align: left;">These pancakes were easy to make, surprisingly! I let the dough rest on the counter for about 1.5 hours, and let it remain just a tad sticky when rolling. This gave me enough traction to get the dough SUPER thin. The doubling-up on the pancakes for cooking was a time-saving trick, and the final pancakes were perfect. Just a bit chewy, not at all gummy, and a perfect vehicle for the vegetable Moo Shu I threw together while cooking the pancakes.</p><p style="text-align: left;">Although the pancakes were the star here, the filling was rather easy. I sautéed some coleslaw mix, broccoli, mushrooms and carrots in a sauce made with soy sauce, hoisin sauce, garlic and sesame oil. At the last minute I added some shredded iceberg lettuce and uncooked carrots for a filling crunch. </p><p style="text-align: left;">This meal was filling, vegetarian, and really delicious. I have been on the quest to make a 100% commercial-yeast-free sourdough milk bread, but without actual cow's milk for some time now. Inspired by another amazing Great British Baking Show in which a contestant baked milk bread, we decided it was time to give it a go! Armed with <a href="https://www.amazon.com/Native-Forest-Coconut-Powder-Ounce/dp/B00QIVB19Y/ref=sr_1_13?keywords=coconut+milk+powder&qid=1638995472&rdc=1&sr=8-13">coconut milk powder</a>, full-fat <a href="https://www.amazon.com/Oatly-Milk-Oat-Full-Fat/dp/B07SX36KZZ/ref=sr_1_5?crid=3EE8FDO7WTONX&keywords=full+fat+oat+milk&qid=1638995533&sprefix=full+fat+oat+mi%2Caps%2C187&sr=8-5">oat milk</a>, and my favorite <a href="https://www.amazon.com/MIYOKOS-CREAMERY-Organic-Europen-Cultured/dp/B07D6SBD3V/ref=sr_1_4_0o_wf?keywords=cultured+non+dairy+butter&qid=1638995575&sr=8-4">cultured non-dairy butter</a>, I am proud to say that this is BEYOND a complete success.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">I used <a href="https://food52.com/recipes/85067-overnight-soft-sourdough-milk-bread-shokupan">this</a> milk bread recipe from a trusted site, Food52. It did take a bit of time and planning, but it was so worth it, and we're already plotting another loaf. It's brilliant to use natural yeast for the impressive rise, and sourdough loaves always keep longer than their commercial yeast counterparts.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">I was amazing at the incredible rise. When I placed the bread into the pullman pan for an overnight proof, it was only about 1" above the base of the pan. In the morning, the dough had risen at least an inch above the top! The rising kept on going during baking, and with a small amount of foil-tenting time to prevent over-browning, the bake was fast and easy.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">This loaf is like a brioche, but without the heavy butter. It's light, airy, fluffy, and absolute perfection. L couldn't agree more, and we enjoyed a slice covered in organic strawberry jam. In my opinion, the key to the perfect dinner roll is one that is super tall, fluffy, aerated and soft. Well, I finally did it! One of my favorite baker-bloggers, Maurizio from <a href="https://www.theperfectloaf.com/" target="_blank">The Perfect Loaf</a> has the best recipes. You can really tell the time that he takes to fully test and develop a successful loaf.</div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">Anyway, back to these pumpkin dinner rolls. The recipe for the <a href="https://www.theperfectloaf.com/sourdough-pumpkin-dinner-rolls/#tasty-recipes-14358-jump-target">rolls</a> involves fairly simple steps for the well-versed sourdough baker. They rose impressively throughout all the rises, and the final product was truly perfect. I ended up baking them the week before Thanksgiving, and freezing them immediately once they had cooled. I defrosted them on Thanksgiving morning, and put them into the oven, wrapped in foil, to heat up for the meal itself. The rolls remained soft and tender throughout, they leftover rolls kept for a good 4 days before even starting to show any signs of staleness. They are perfect with a bit of butter and salt. Equally as good with peanut butter and jelly, or peanut butter and maple cream (my personal favorite). </div><div class="separator" style="clear: both; text-align: left;"><br /></div><div class="separator" style="clear: both; text-align: left;">The rolls are just slightly tangy, not sweet, and delicious for any time of year. I ordered some Prince from Amazon, along with dried organic chickpeas, and found <a href="https://food52.com/recipes/42695-zahav-s-hummus-tehina">this</a> hummus recipe. Last night I placed the chickpeas in a pot of water to soak overnight, and this morning I boiled them away. Fast forward to later in the morning when my trusty helper, J, got behind the food processor buttons, and about 15 minutes later we produced the most incredible hummus ever. It's etherial in texture, not overly garlic-laden, and just so, so smooth. I'd say we came pretty darn close to bringing Yalla into our own kitchen. This edamame dip is amazing. It's like an elevated guacamole. Tangy, umami, and totally fantastic. Plus, the bright green color just makes it so much more appealing. With L's dietary sensitivities, we haven't had this dish in a long time. Wow! Am I glad that I took this one off the "to make" list!<p></p><p>First, the sauce is rich, thick-enough, super creamy, and totally filled with that cheesy-umami-goodness. The entire family LOVED this meal. J and D added some fresh parmesan cheese to their plates, but L and I kept ours vegan, and didn't miss out on anything.</p><p>We even had a "guess what's in the sauce" discussion and the kids were able to correctly identify all ingredients. Their palates are certainly coming along:) </p><p>We will certainly be making this for dinner again soon. Oh, and if you're in a time-crunch, this is a great one to make. Literally came together in minutes. We ate ours with a healthy side of pan sautéed Brussels sprouts topped with hot-honey. <b>Sesame Crumble</b><br />
1/2 c sesame seeds<br />
1 tbs coconut oil<br />
1 tbs cane sugar<br />
3 tbs maple syrup<br />
pinch of salt<br />

Preheat oven to 400F. Mix the oil, sugar, syrup and salt in a small sauce pan and heat to melt the sugar. Once it starts to bubble, stir in the sesame seeds and place onto a baking sheet in a thin layer. Bake for about 10 minutes, or until the edges begin to brown. Remove from the oven and cool completely before breaking into pieces.<br />

<b>Chocolate Banana Tahini Nice-Cream</b><br />
3 frozen bananas, cut into chunks<br />
2 tbs cacao powder<br />
<br />
2 tbs tahini<br />
1-2 tbs maple syrup (depending on sweetness)<br />
1/4 c vanilla almond milk (unsweetened)<br />
pinch of salt<br />
chocolate chips or chocolate shavings (I used shavings from a hunk of dark chocolate) to taste/as desired<br />
<br />
Blend in a high speed blender (like a Vitamix) until smooth. Stir in chocolate chips or chunks. Place into a shallow storage container and put into the freezer for a few hours to firm up a bit. Remove from freezer, top with sesame seeds, marshmallows, cacao nibs, or whatever you'd like and enjoy!<br />

Apparently today is National Ice Cream Day! Since some of our household cannot have dairy ice cream, we went on a hunt for local, small-batch, vegan ice cream. Sadly the store we were hoping to frequent was closed! (Not sure how an ice cream shop can be closed on National Ice Cream Day!) Instead of feeling down, I got into the kitchen and whipped this nice-cream up in a matter of minutes. The results are fantastic. It's creamy, just sweet enough, and with the sesame crunch it has such a delightful nuttiness. We got a head of Napa cabbage in our CSA last week. Anyone who knows me knows that I love a good crispy cabbage salad. Ever since it showed up, I've been searching for just the right recipe to use it in.<br />

I found this recipe for <a href="https://www.bonappetit.com/recipe/scrunched-cabbage-salad-with-grapefruit-and-chiles">cabbage salad with grapefruit and chiles</a> in Bon Appetit's Healthy-ish, and I couldn't wait to get it ready for dinner.<br />
<br />
In the morning I tasked D with making the pickled chiles. We didn't have white wine vinegar, so I suggested apple cider vinegar in it's place.<br />
<br />
The end result was perfect. These chiles were spicy, but not unbearably so, and the crisp cabbage went perfectly with the tangy vinegar, spice, and bright mint flavors. Thankfully we've got some leftover, along with some lefrover chilies just waiting for their next iteration. 1 ripe banana, mashed<br />
1/4 c apple sauce<br />
1/4 c honey (or agave or maple syrup)<br />
2 tbs oil (your choice)<br />
1/2.c vanilla almond milk<br />
1 egg<br />
2 c oat flour<br />
2 tbs milled flax seed<br />
1 tsp baking powder<br />
1/2 tsp baking soda<br />
1/3 tsp sea salt<br />
1/4 tsp cinnamon<br />
1 c shredded and drained zucchini<br />
1/4 c mini chocolate chips<br />
<br />
Preheat oven to 350F<br />
Place all ingredients into a blender, except for the zucchini and chocolate chips. Blend well. Fold in the zucchini and chocolate chips and spoon into a muffin tray.<br />
Bake for about 20-25 mins, or until they start to crack on top, and are just cooked through. Cool on a wire rack and enjoy.<br />

Despite everything happening in this crazy world currently, our local CSA is still up and running, thankfully! With this week's haul, we were able to get some zucchinis, which is a total joy at this time of summer. Who doesn't love grilled or pan fried zucchini or zucchini bread???<br />
<br />
The kids got wind of zucchini and begged for some muffins. Initially I thought about making a chocolate version with cacao, but Ms. L asked for the "ones we like, they aren't chocolate, but they have chocolate chips". I'm still unsure of what those are, perhaps the banana ones? Who knows?!? But, these were instant winners:)<br />

I just fed my starter to make pizza dough for later this week. I had a generous amount of leftover starter, and I couldn't send it to waste. But, since we're in temporary housing until our house construction is completed, I don't have the capacity to make things like pancakes...so, here are where these crackers came in!<br />

I didn't have herbs or Maldon to dress these babies up with, but it didn't matter! The dough literally took seconds to come together, and they are crispy and fantastic. All of my taste-testers agree...<br />

Yesterday was sourdough feeding day in our house, which always means a busy day in the kitchen as well. I had bookmarked this recipe for <a href="https://www.baked-theblog.com/sourdough-english-muffin-bread/">English Muffin Tasting Bread</a> a while back, and while the kids were busy with e-school, I figured it was a perfect time to try it out!<br />
<br />
The bread was easy to put together. I used white whole wheat flour and bread flour, and a very active sourdough starter. The dough was a bit wet, but after the initial rise it seemed very wet. It also deflated enormously during the punch down, and I have to admit that I was a bit nervous about the baking powder-next rise step. Have faith! This dough rose incredibly and was cresting the lip of the pan in no time at all!<br />
<br />
It baked for 35 minutes, and was perfectly golden brown. When sliced it is full of small nooks and crannies, and it has a nutty-wheaty flavor, but also a slight sweetness. When toasted and smeared with a bit of butter (and marmalade!) it tastes like a very slightly denser English Muffin! Tonight's dinner was a super easy and fabulously delicious meal. I started with inspiration from a recipe for <a href="https://www.bonappetit.com/recipe/soba-noodles-with-crispy-kale">soba noodles with crispy kale</a>, but soon realized that I didn't have any tahini on hand. (I know, this is very unusual for me!)<br />
<br />
I love that the kale involves nutritional yeast. We almost always make our kale chips with nutritional yeast because it adds an umami dimension to the flavors (and it's pretty good for you!). I think I single handedly ate about half of the kale I made. I really do LOVE kale.<br />
<br />
For the sauce, I used a combination of soy sauce, miso, a small amount of hoisin sauce, an equally small amount of honey, sesame oil, water, a generous tbs of almond butter, red pepper flakes, lime zest, and lime juice. It was sweet and tangy with just enough bite.<br />
<br />
This dish is perfect for the summer, since it really doesn't have to be eaten hot. It also takes about 30 minutes from start to finish, which is also an added summer bonus. Less cooking time means more outdoor time!<br />

Things are a bit hectic these days between the covid pandemic and a move/temporary housing. But, the one constant is that we are always ready and prepared for baking! This morning's adventure was a way to clear a bit of freezer space, and use up a couple of frozen bananas. I had previously baked a batch of <a href="https://www.makingthymeforhealth.com/vegan-banana-oatmeal-blender-muffins/">these</a> muffins, which were GREAT. So, why not try <a href="https://www.makingthymeforhealth.com/flourless-vegan-gluten-free-oatmeal-banana-bread/">vegan oat banana loaf</a>?<br />

I love these recipes that literally come together in my Vitamix in a couple of seconds, and before you know it, the whole house has a deliciously sweet banana bread smell wafting about. I threw in about 3 tbs of flax seeds and 1/4 c of flaked coconut for good measure. Because of these additions, I increased the total almond milk volume to around 1/2 c.<br />

What do you do when you have some over-ripe bananas and you're still stuck in the house due to a pandemic? Bake some more! Today's treat were these incredible <a href="https://www.makingthymeforhealth.com/healthy-chocolate-peanut-butter-banana-muffins/">chocolate peanut butter banana muffins</a>.<br />

I can almost call these muffins "healthy", and they look so much like cupcakes, the kids were psyched. Pretty much a win-win.<br />

The batter is literally dumped into a blender, and comes together in a matter of minutes. I added a few tbs of apple sauce to the recipe, and used cacao in place of cocoa. You could easily replace the peanut butter with nut-free butter, almond butter, tahini, etc. These babies were a complete hit. 2/3 c active (and runny) sourdough starter<br />
1/2 c warm water<br />
1 scant c warmed vanilla almond milk (unsweetened)<br />
1 tbs vegetable oil<br />
2 tbs honey<br />
1 tsp sea salt<br />
3/4 c spelt flour<br />
1 1/2 c oats<br />
around 3 c all purpose flour<br />
<br />
Place into a large bowl, and knead until fairly shaggy and only a bit sticky. Let it rest for 8-12 hours depending on how active your starter is...mine only needed about 8 hrs. Punch down a few times during the rising process.<br />
When it's less sticky, more elasticy and almost doubled in size, preheat your oven to 375F. Place the dough into a bread loaf pan, and let it rise again until it's just cresting the pan. Bake until golden brown and registering 190F. Enjoy!<br />

My starter is very robust, and I knew that a cup of it would make an incredibly risen dough, so I decided to change the recipe a bit. In addition, I didn't want any whole wheat flour on hand, so I subbed with spelt. Usually, I use weights to measure my flour for breads, but the initial recipe didn't have weights, so I just went with feel.<br />

This bread was a complete success. It's HUGE, nutty, a beautiful golden color, and with a perfect crisp crumb. While doing some blog trolling, I came across an amazing looking recipe for <a href="https://www.loveandlemons.com/bao-buns/">Steamed Bao Buns</a>. They are packed with crisp veggies, healthy-nutty tempeh, and looked fabulous. Surprisingly, these buns took fairly little effort to make, and they were a complete hit at the dinner table.<br />
<br />
We did table-side stuffing of our steamed buns, giving people the autonomy to make their buns their own! This made the meal more fun, and topped with hoisin and sriracha, these are truly a winner.<br />

The buns are soft, fluffy, and the combination of flavors and textures were a total success. I'm fairly certain these buns will be making a reappearance at our table. 2/3 c vanilla almond milk (or milk of your choice with additional vanilla extract)<br />
1 tbs apple cider vinegar<br />
3 ripe bananas, mashed<br />
1/2 c tahini<br />
1/4 c apple sauce<br />
2 eggs<br />
1/4 c maple syrup<br />
3 tbs canola oil<br />
1 1/2 c all purpose flour<br />
1/2 c almond flour<br />
1/4 c milled flax seed<br />
1 1/2 tsp baking powder<br />
1/2 tsp baking soda<br />
1/2 tsp sea salt<br />
1/4 c chocolate chips<br />

Preheat the oven to 350F and line muffin tins with cups. Mix the milk and vinegar together and set aside. Mash the bananas, adding apple sauce, tahini, eggs, maple syrup, and oil. Whisk together and then whisk in the milk mixture.<br />
In a separate bowl (or if you're lazy like me, just throw it into the wet ingredients bowl!), mix the flours through sea salt. Add the dry ingredients to the wet, and then fold in the chocolate chips. Place into the muffin tins and bake for about 20 minutes, or until just golden and cooked through. Cool and enjoy!<br />

These muffins were adapted from a Snixy Kitchen <a href="https://www.snixykitchen.com/gluten-free-tahini-banana-chocolate-chip-muffins/">recipe</a> for gluten free tahini banana muffins. I didn't need them to be gluten-free, and wanted to add some other things to the mix, but the inspiration was phenomenal.<br />

One could definitely use tahini here in place of sesame seed butter (or any nut butter if you don't require a nut-free version). I have been liking this <a href="https://thrivemarket.com/p/seedible-organic-chunky-sesame-butter">sesame seed butter</a>. It comes creamy or chunky, and I used the chunky here simply because that was what was in the pantry! My favorite protein powders these days are Amazing Grass. I used <a href="https://thrivemarket.com/p/amazing-grass-protein-superfood-chocolate">this chocolate one</a> for these protein bites. I like Amazing Grass because it's plant-based, and non-whey protein.<br />

We opted for taco Monday instead of taco Tuesday today, and with another perfect idea from <a href="http://www.pinchofyum.com/">PinchofYum</a>, it was an awesome meal.<br />

The idea of pulsing cauliflower with nuts to make a ground "meat" was fabulous, and I have been excited to try out <a href="https://pinchofyum.com/cauliflower-walnut-vegetarian-taco-meat">this</a> taco recipe. I didn't have any chipotles in adobo, so I used a few tbs of tomato paste and a spice mixture of chili powder, cumin, and a bit of tumeric pulsed in with the cauliflower and walnuts. I added a few glugs of olive oil, and raised the heat for cooking (to about 400F).<br />
<br />
The filling for these tacos was amazing. J kept saying "this really tastes almost like meat", and it was the perfect way to enjoy tacos. We topped ours with roasted poblano pepper, scallion, cilantro, cabbage, iceberg lettuce, pickled jalapenos, and some hot sauce. Using my standard homemade corn tortilla, this meal was a total roaring success.
